Pukki Biryani/Mutton Biryani Recipe

Ingredients:

Soup

Mutton                                               500 gm
Onion                                                  55 gm
Cloves                                                   1 gm
Cinnamon                                              1 gm
Cardomom                                            1 gm
Garlic                                                    6 flakes
Ginger                                                   5 gm
Salt                                                      10 gm

Rice

Basmati rice                                        400 gm
Sultanas                                              15 gm
Onions                                                115 gm
Fat                                                      115 gm
Egg                                                     1 no

Procedure:

Soup

1. Wash and cut up the meat. 
2 Peel onion and leave it whole, peel garlic and bruise ginger.
3. Put all the ingredients in the pan and cook gently till meat is tender.
4. Cool and remove fat from surface.
5. Remove meat and strain soup.

Rice

1. Wash and soak rice.
2. Slice onions.
3. Fry onions till crisp, remove and put aside.
4. Add meat and brown. Then add rice and spices from the soup. Fry untill all the fat has been absorbed.
5. Add soup and cook till rice is tender.
6. Serve hot garnished with fried onions and sultanas and sliced hot boiled egg. ( for four portions)
