Egg Bhurji (Spicy Scrambled Egg)

Egg bhurji/Scrambled egg prepared with Indian spices, onion and tomato is a popular side dish in restaurants and hotels all over India called as muttai poriyal/Egg bhurji. This spicy scrambled egg is a quick side dish recipe which goes well with rice, roti and can be stuffed in rolls. Try this spicy scrambled egg/egg bhurji at home and Enjoy Cooking!!!


Eggs                                                             8
Oil                                                                4 tbsp
Onions, chopped                                          4 medium
Tomatoes, chopped                                      4 medium
Ginger, grated                                              1 inch piece
Green chillies, chopped                                4
Garam Masala                                            1 tsp
Salt                                                              to taste
Fresh coriander leaves                                  4 tbsp


1.Chop onions and tomatoes roughly. 
2. Heat oil in a pan. Sauté onions till light brown. 
3. Add ginger, green chillies, garam masala and tomatoes and continue to sauté. 
4. Break eggs into a bowl and add salt and whisk lightly. Pour this into the pan and cook stirring continuously till almost dry. Lower the heat and sauté till dry. 
5.Add coriander leaves and serve hot with ajwain flavoured paranthas or bread.
